Meet Lou Sweilem

Lou Sweilem grew up in the northern suburbs of Chicago — where food isn't just food, it's identity. Chicago-style hot dogs dragged through the garden. Slow-roasted Italian beef dripping with gravy. Perfectly seasoned gyros carved fresh. That bold, no-shortcuts flavor was simply a way of life.

Before bringing those flavors south, Lou owned and operated a fast-food restaurant on the north side of Chicago. The restaurant business wasn't new to him — it was in his blood. He understood quality, speed, and most importantly, consistency. In Chicago, you don't get second chances with food. It has to be right.

Lou frequently visited South Florida, where his childhood best friend — and cousin — was living. After nights out and a few drinks, his cousin would ask the usual question:

“What do you want to eat?”

Lou's answer never changed.

“Man… I really feel like a Chicago hot dog. Or an Italian beef. Maybe a gyro.”

The reply?

“We don't have that in Florida.”

That answer shocked him every time.

How could one of the greatest food cities in America not be represented in South Florida?

In 2001, Lou decided to change that. If Florida didn't have real Chicago-style food — he would bring it himself.

And just like that, Fat Lou's was born.

Built on authentic recipes, true Chicago attitude, and no-compromise quality, Fat Lou's isn't just a restaurant — it's a taste of home for Chicagoans and a flavor awakening for everyone else.
